Spinach Stuffed Pastry

Ingredients:

  • 2 sheets puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Preparation:

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add chopped spinach and cook until wilted (about 2-3 minutes). Let it cool slightly.
    In a bowl, mix the cooked spinach, ricotta, Parmesan, garlic powder, salt, and pepper.
  3. Assemble the Pastries: Roll out the puff pastry on a lightly floured surface and cut each sheet into 4 squares (8 squares total). Place a spoonful of the spinach mixture in the center of each square. Fold the pastry into rectangles or triangles, sealing the edges with a fork. Place them on the prepared baking sheet.

  5. Bake: Bake for 15-20 minutes or until golden and puffed.
