Instructions:
Prepare the Cod:
Pat the cod fillets dry with paper towels. Season lightly with salt and pepper.
Make the Batter:
In a bowl, whisk together flour, paprika, garlic powder, onion powder, baking powder, salt, and pepper.
Gradually add cold sparkling water, whisking until the batter is smooth and slightly thickened.
