Soup with meatballs

List of ingredients:

For the meatball recipe:

1 pound of ground beef
1/2 cup of finely chopped yellow onion.
2 pieces of garlic, finely chopped
1/2 cup of breadcrumbs, either Italian or plain.
1 big egg
2 teaspoons of Worcestershire sauce
1/2 teaspoon of coarse salt
1/2 teaspoon of freshly ground black pepper
3 tablespoons of olive oil

 

About Soup:

 

2 tablespoons of olive oil
1 average-sized onion, diced
2 big carrots, peeled and cut into pieces.

3 pieces of celery, cut into small pieces.
1 and 1/2 cups of green beans, with the ends removed and cut into pieces that are 1 inch long.
1 and a half teaspoons of dried parsley
1 teaspoon of dried oregano
1/2 teaspoon of dried basil.
1/2 teaspoon of powdered garlic
1/2 teaspoon of powdered onion
6 cups of beef broth with low sodium.
1 can of tomato sauce (8 ounces)
1 can of fire-roasted tomatoes (14.5 ounces)
3/4 cup of small pasta like mini bow ties, small tubes, small balls, or rice-shaped pasta.
Fresh parsley, finely chopped (to sprinkle on top)
Add salt and pepper as desired.

 

Directions:

Make the meatballs.
In a big bowl, mix together beef, chopped onion, garlic, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix thoroughly and form into small balls.
Prepare the vegetables.
In a big pot, warm 2 tablespoons of olive oil on medium heat. Put diced onion, carrots, and celery. Cook the vegetables until they are tender, for around 5 to 7 minutes.
Spice it up!
Add green beans, dried parsley, oregano, basil, garlic powder, and onion powder and mix well. Cook for 2-3 more minutes.
Include liquids.
Add the beef broth, tomato sauce, and tomatoes roasted over fire. Heat the mixture until it starts boiling.

Cook over low heat.
Put the meatballs and pasta together. Lower the heat and let it cook gently until the meatballs are done and the pasta is soft, which should take around 15-20 minutes.
Prepare and enjoy.
Add salt and pepper to the soup according to your preference. Serve the dish hot and sprinkle with chopped parsley.
