Ingredients:
Vegetable oil for frying
1½ cups all-purpose flour
½ cup cornstarch
1 tbsp baking powder
2 tsp kosher salt
½ tsp cayenne pepper
1½ cups water
2 pounds cod, hake, or other white fish
Instructions:
Preheat Oil: Heat the vegetable oil to 350°F (175°C) in a deep fryer or a medium-sized saucepan.
Prepare Batter: In a medium bowl, combine the flour, cornstarch, baking powder, salt, and cayenne pepper. Whisk in the water until the batter is mixed and a bit foamy.
Prep Fish: Pat the fish dry with a paper towel to remove excess moisture. Dip each fillet into the batter, ensuring it’s fully coated.
Deep Fry: Carefully deep-fry the fillets for 3 to 4 minutes until they are golden brown. If frying multiple pieces, ensure they’re separated in the oil.
Drain Fish: Once cooked, let the fish drain on a wire rack to remove excess oil.
