Ingredients:

  • 2 slices of sourdough or rustic bread

  • 1 ripe avocado, mashed or sliced

  • 2–3 slices fresh mozzarella

  • 2–3 slices fresh tomato

  • 1 tbsp pesto (optional, but amazing!)

  • Butter or olive oil, for toasting

  • Salt & pepper to taste

Instructions:

  1. Preheat your skillet

    • Heat a nonstick pan or griddle over medium heat.

  2. Assemble the sandwich

    • Spread pesto (if using) on one or both slices of bread.

    • Layer mozzarella, sliced tomato, and mashed or sliced avocado.

    • Sprinkle with salt, pepper, and a little fresh basil.

    • Lightly butter the outside of the sandwich (or drizzle olive oil in the pan).
