  • 2½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 2/3 cup cold water

Instructions

Step 1: Make the Dough (Detrempe)

  1. Mix Dry Ingredients
    • In a large bowl, whisk together the flour and salt.
  2. Incorporate Butter
    • Add the cubed butter and toss to coat in the flour. Using a pastry cutter or your hands, work the butter into the flour until pea-sized chunks remain.
  3. Add Water
    • Gradually add the cold water, mixing until a rough dough forms. Do not overmix—it’s okay if it looks shaggy.
  4. Chill
    • Shape the dough into a rectangle, wrap it in plastic, and refrigerate for at least 30 minutes.

Step 2: Roll and Fold (Lamination)

  1. Roll Out Dough
    • On a floured surface, roll the dough into a long rectangle (about 8×16 inches).
  2. First Fold
    • Fold the dough into thirds, like folding a letter. Turn it 90 degrees so the open ends are facing you.
  3. Repeat Rolling and Folding
    • Roll the dough out again into a rectangle and fold into thirds. Repeat this process 4-6 times, chilling the dough for 20 minutes between every 2 folds.

Step 3: Final Chill

  1. Chill Again
    • After the final fold, wrap the dough tightly in plastic and refrigerate for at least 1 hour before using.

Tips

  • Keep It Cold: Cold butter is key for flaky layers. If the butter starts to melt, chill the dough immediately.
  • Use for Everything: Puff pastry is perfect for pies, tarts, turnovers, or savory appetizers like sausage rolls.
