Tasty and Delicious Barbecue Skewers

Here’s a Tasty and Delicious Barbecue Skewers recipe — juicy, flavorful, and perfect for grilling season (or even broiling indoors)!


Ingredients:

For the Skewers:

  • 1 1/2 pounds boneless chicken thighs or breasts, beef sirloin, or shrimp

  • 1 red bell pepper, cut into chunks

  • 1 yellow bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • 1 zucchini, sliced into thick rounds

  • 8–10 skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Marinade:

  • 1/2 cup barbecue sauce (your favorite brand or homemade)

  • 2 tablespoons olive oil

  • 1 tablespoon honey or brown sugar

  • 1 tablespoon soy sauce

  • 2 teaspoons garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt


Instructions:

  1. Prepare the marinade:
    In a large bowl, whisk together the barbecue sauce, olive oil, honey, soy sauce, garlic powder, smoked paprika, salt, and pepper.

  2. Marinate the meat:
    Cut your chosen protein into bite-size pieces (about 1.5-inch cubes). Add to the bowl with the marinade and toss to coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

  3. Prep the vegetables:
    While the meat marinates, chop the peppers, onion, and zucchini into similar-sized pieces to ensure even cooking.

  4. Assemble the skewers:
    Thread the marinated meat and veggies alternately onto the skewers — like meat, pepper, onion, zucchini, then repeat.

  5. Grill or broil:

    • Grill method: Preheat your grill to medium-high heat. Grill the skewers for about 10–12 minutes, turning occasionally and basting with extra barbecue sauce, until the meat is cooked through and slightly charred.

    • Broil method: Preheat your oven’s broiler. Place skewers on a baking sheet lined with foil and broil 4–6 inches from the heat for about 8–10 minutes, turning once halfway and basting as they cook.

  6. Serve:
    Remove from heat and brush with a final layer of barbecue sauce if desired. Garnish with chopped parsley or green onions for a fresh touch.
