Shepherd’s Pie Tater Tot Casserole

Savory ground beef and veggies in rich gravy, topped with crunchy tater tots and melty cheese — pure comfort food!


Ingredients:

  • 1 lb ground beef (or ground lamb for traditional flavor)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 1/2 cups frozen mixed vegetables (peas, carrots, corn)

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme or Italian seasoning

  • Salt & pepper to taste

  • 2 tbsp all-purpose flour

  • 3/4 cup beef broth (or more as needed)

  • 2–3 cups frozen tater tots

  • 1 to 1 1/2 cups shredded cheddar cheese (optional, but recommended)


Instructions:

1. Preheat Oven:
Preheat to 400°F (200°C). Lightly grease a 9×13-inch casserole dish.

2. Make the Meat & Veggie Filling:

  • In a large skillet, brown ground beef with diced onion over medium heat.

  • Drain any excess fat.

  • Stir in garlic, tomato paste, Worcestershire, thyme, salt, and pepper.

  • Sprinkle flour over the mixture, stir well, and cook for 1 minute.

  • Add beef broth and frozen veggies. Simmer until thickened (3–5 minutes). Adjust seasoning.

3. Assemble the Casserole:

  • Spread the beef mixture evenly into the baking dish.

  • Sprinkle shredded cheese over the top (optional).

  • Arrange frozen tater tots in a single layer over the filling.

4. Bake:

  • Bake uncovered for 25–30 minutes, or until tots are golden brown and crispy.

  • Optional: sprinkle more cheese on top in the last 5 minutes for extra cheesiness.

5. Cool & Serve:

  • Let cool for 5–10 minutes before serving. Garnish with chopped parsley if desired.


Tips:

  • Make it ahead and refrigerate before baking — just add 5 extra minutes to the oven time.

  • Add mushrooms or swap in ground turkey or chicken for a lighter version.

  • Want a spicy twist? Add a dash of hot sauce or pepper jack cheese.
