Shepherd’s Pie Tater Tot Casserole
Savory ground beef and veggies in rich gravy, topped with crunchy tater tots and melty cheese — pure comfort food!
Ingredients:

1 lb ground beef (or ground lamb for traditional flavor)

1 small onion, diced

2 cloves garlic, minced

1 1/2 cups frozen mixed vegetables (peas, carrots, corn)

2 tbsp tomato paste
-
1 tbsp Worcestershire sauce

1 tsp dried thyme or Italian seasoning
-
Salt & pepper to taste

2 tbsp all-purpose flour
-
3/4 cup beef broth (or more as needed)

2–3 cups frozen tater tots

1 to 1 1/2 cups shredded cheddar cheese (optional, but recommended)
Instructions:
1. Preheat Oven:
Preheat to 400°F (200°C). Lightly grease a 9×13-inch casserole dish.
2. Make the Meat & Veggie Filling:

In a large skillet, brown ground beef with diced onion over medium heat.

Drain any excess fat.

Stir in garlic, tomato paste, Worcestershire, thyme, salt, and pepper.

Sprinkle flour over the mixture, stir well, and cook for 1 minute.

Add beef broth and frozen veggies. Simmer until thickened (3–5 minutes). Adjust seasoning.
3. Assemble the Casserole:

Spread the beef mixture evenly into the baking dish.

Sprinkle shredded cheese over the top (optional).

Arrange frozen tater tots in a single layer over the filling.
4. Bake:

Bake uncovered for 25–30 minutes, or until tots are golden brown and crispy.

Optional: sprinkle more cheese on top in the last 5 minutes for extra cheesiness.
5. Cool & Serve:

Let cool for 5–10 minutes before serving. Garnish with chopped parsley if desired.
Tips:

Make it ahead and refrigerate before baking — just add 5 extra minutes to the oven time.

Add mushrooms or swap in ground turkey or chicken for a lighter version.
