This French classic, traditionally enjoyed for Epiphany, gets a nutty twist with a luscious pistachio cream filling. Crispy puff pastry encases the creamy interior—fit for royalty!


Ingredients

For the Pastry:

  • 2 sheets of puff pastry, thawed if frozen
  • 1 egg, beaten (for egg wash)

For the Pistachio Cream Filling:

  • 1/2 cup pistachios, finely ground
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)

  • Powdered sugar for dusting
  • Sliced pistachios for garnish

Instructions

Step 1: Prepare the Pistachio Cream

  1. Grind the Pistachios
    • Use a food processor to finely grind pistachios into a powder.
  2. Cream the Butter and Sugar
    • In a mixing bowl, beat the softened butter and sugar until light and fluffy.
  3. Mix the Filling
    • Add eggs one at a time, beating well after each addition. Stir in the almond flour, ground pistachios, vanilla extract, and almond extract (if using). Set aside.

Step 2: Assemble the Galette

  1. Roll Out Pastry
    • Roll out the puff pastry sheets on a lightly floured surface. Using a plate or a large round cutter, cut two circles approximately 10 inches in diameter.
  2. Fill the Pastry
    • Place one pastry circle on a baking sheet lined with parchment paper. Spread the pistachio cream evenly over the surface, leaving a 1-inch border around the edge.
  3. Hide the “Fève”
    • Traditionally, a small figurine or almond is hidden in the filling for fun!
  4. Seal the Galette
    • Brush the edges of the pastry with the beaten egg. Place the second circle of pastry on top, pressing the edges to seal.
  5. Decorate
    • Use a sharp knife to score decorative patterns on the surface (be careful not to cut through). Brush the entire galette with egg wash.

Step 3: Bake

  1. Chill
    • Chill the assembled galette in the refrigerator for 20 minutes to firm up the pastry.
  2. Bake
    • Preheat the oven to 375°F (190°C). Bake the galette for 25-30 minutes, or until golden brown and puffed.

    • Allow the galette to cool slightly before dusting with powdered sugar or garnishing with sliced pistachios.
