Galette des Rois with Pistachio Cream ✨
This French classic, traditionally enjoyed for Epiphany, gets a nutty twist with a luscious pistachio cream filling. Crispy puff pastry encases the creamy interior—fit for royalty!
Ingredients
For the Pastry:
- 2 sheets of puff pastry, thawed if frozen
- 1 egg, beaten (for egg wash)
For the Pistachio Cream Filling:
- 1/2 cup pistachios, finely ground
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup almond flour
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional)
Optional Decoration:
- Powdered sugar for dusting
- Sliced pistachios for garnish
Instructions
Step 1: Prepare the Pistachio Cream
- Grind the Pistachios
- Use a food processor to finely grind pistachios into a powder.
- Cream the Butter and Sugar
- In a mixing bowl, beat the softened butter and sugar until light and fluffy.
- Mix the Filling
- Add eggs one at a time, beating well after each addition. Stir in the almond flour, ground pistachios, vanilla extract, and almond extract (if using). Set aside.
Step 2: Assemble the Galette
- Roll Out Pastry
- Roll out the puff pastry sheets on a lightly floured surface. Using a plate or a large round cutter, cut two circles approximately 10 inches in diameter.
- Fill the Pastry
- Place one pastry circle on a baking sheet lined with parchment paper. Spread the pistachio cream evenly over the surface, leaving a 1-inch border around the edge.
- Hide the “Fève”
- Traditionally, a small figurine or almond is hidden in the filling for fun!
- Seal the Galette
- Brush the edges of the pastry with the beaten egg. Place the second circle of pastry on top, pressing the edges to seal.
- Decorate
- Use a sharp knife to score decorative patterns on the surface (be careful not to cut through). Brush the entire galette with egg wash.
Step 3: Bake
- Chill
- Chill the assembled galette in the refrigerator for 20 minutes to firm up the pastry.
- Bake
- Preheat the oven to 375°F (190°C). Bake the galette for 25-30 minutes, or until golden brown and puffed.
Step 4: Serve
- Cool and Decorate
- Allow the galette to cool slightly before dusting with powdered sugar or garnishing with sliced pistachios.
- Slice and Enjoy
- Serve warm or at room temperature. The pistachio cream is creamy and nutty, complementing the flaky pastry beautifully.
Tips
- Storage: Store leftovers in an airtight container at room temperature for 1-2 days.
- Make Ahead: The pistachio cream can be prepared a day in advance and refrigerated. Bring it to room temperature before assembling the galette.
- Variations: Add a layer of raspberry jam on top of the pistachio cream for a fruity twist.
Enjoy the decadent and festive Galette des Rois with Pistachio Cream—a regal dessert that’s perfect for celebrations! ✨
