Crockpot Ranch Chicken and Potatoes

Ingredients:

For the Crockpot:

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 pound baby potatoes, halved
  • ¼ cup chicken broth
  • 1 cup shredded cheddar cheese

For Garnish:

  • Fresh parsley, chopped

Instructions:

1️⃣ Prepare the Ingredients

  • Wash and halve the baby potatoes.
  • Lightly grease the slow cooker with non-stick spray or a little olive oil.

2️⃣ Assemble in the Crockpot

  • Place the chicken breasts at the bottom of the crockpot.
  • Sprinkle the ranch seasoning evenly over the chicken.
  • Add the halved baby potatoes on top.
  • Pour in ¼ cup chicken broth to keep everything moist.

3️⃣ Slow Cook

  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and fully cooked (165°F internal temperature).

4️⃣ Add Cheese & Serve

  • Sprinkle shredded cheddar cheese over the chicken and potatoes.
  • Cover and cook for 5-10 more minutes, until the cheese melts.

5️⃣ Garnish & Enjoy

  • Sprinkle fresh chopped parsley before serving.
