Ingredients:

  • 2 (6 oz) filet mignon steaks
  • Salt & freshly cracked black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • Fresh thyme or rosemary sprigs
  • 12 large shrimp, peeled & deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • Red pepper flakes (optional)
  • 8 oz linguine
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt & pepper to taste

Directions:

  1. Prepare the Filet Mignon: Start by seasoning your filet mignon steaks with salt and pepper. Heat olive oil in a skillet over high heat until it looks shiny. Sear the steaks for about 3-4 minutes on each side until they form a nice crust. Then, lower the heat and add butter, garlic, and herbs. Baste the steaks in this mixture. Cook until they reach your desired doneness (130°F for medium-rare). After that, let them rest for about 5 minutes.

  2. Cook the Garlic Butter Shrimp: In another pan, melt some butter over medium heat. Add minced garlic and sauté it until it smells wonderful. Toss in the shrimp and cook for 1-2 minutes on each side until the shrimp turn pink and opaque. Drizzle with lemon juice and sprinkle with parsley and optional red pepper flakes for a little kick.

  3. Make the Creamy Linguine: Boil the linguine in salted water until it is al dente. Make sure to save about 1/4 cup of the pasta water. In a pan, melt another tablespoon of butter and add minced garlic, sautéing until fragrant. Next, pour in the heavy cream and let it simmer until it thickens slightly. Stir in the grated parmesan cheese, adding reserved pasta water as needed to make it creamy. Season with salt and pepper to taste.

  4. Assemble: To put it all together, plate the creamy linguine, top it with the filet mignon, and arrange the garlic butter shrimp on the side. Finish with a garnish of fresh parsley and a squeeze of lemon for extra flavor.
