Ingredients

  • 2 ribeye or filet mignon steaks (about 1 inch thick)
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1/2 lb large shrimp, peeled and deveined
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 tsp paprika
  • Fresh parsley, chopped

Directions

  1. Cook the steaks: Heat a skillet or grill pan over medium-high heat. Rub the steaks with olive oil and season them well with salt and black pepper. Sear the steaks for about 3–4 minutes on each side for medium-rare or until they reach your preferred doneness. Once cooked, take them out of the skillet, cover them with foil, and let them rest.

  2. Cook the shrimp: In the same skillet, melt 1 tbsp of butter over medium heat. Add the minced garlic and sauté for about 30 seconds. Toss in the peeled and deveined shrimp, season with a little salt and pepper, and cook for 2–3 minutes on each side until they turn pink and are opaque. Once done, remove them from the skillet and set aside.

  3. Make the cheddar sauce: In a small saucepan, melt 2 tbsp of butter over medium heat. Whisk in 2 tbsp of flour and keep stirring for 1–2 minutes until it turns golden. Gradually whisk in 1 cup of whole milk, stirring until the mixture is smooth and slightly thickened, which will take about 3 minutes. Lower the heat and add 1 cup of shredded sharp cheddar cheese, stirring until it melts into a creamy sauce. Finish by adding 1/4 tsp paprika and seasoning with salt and pepper to taste.

  4. Assemble the dish: Take the rested steak and place it on a plate. Top each steak with a few cooked shrimp. Drizzle the creamy cheddar sauce generously over them.

  5. Garnish and serve: Sprinkle fresh parsley on top for a nice pop of color. Serve your Creamy Cheddar Steak and Shrimp right away with sides like mashed potatoes, roasted vegetables, or some crusty bread.

Tips to Make Creamy Cheddar Steak and Shrimp

  • Choose Quality Steaks: Look for well-marbled steaks for the best flavor.

  • Adjust the Cheese: Feel free to experiment with different types of cheese for a unique taste.
