Directions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray a 9×13" casserole dish with nonstick cooking spray.
  3. In a large bowl, mix together the shredded chicken, uncooked rice, cream of chicken soup, sour cream, frozen onion and bell pepper, diced tomatoes with chilies, chicken broth, fajita seasoning, and about half of the cheese.
  4. Stir until everything is well combined.
  5. Pour the mixture into the prepared casserole dish and spread it evenly.
  6. Cover the dish with tin foil and bake in the oven for 35 minutes.
  7. After 35 minutes, uncover the casserole, sprinkle the rest of the cheese on top, and bake for another 10 minutes until the cheese is melted and golden.
