Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced (like cremini or button)
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional)
  • 2 tablespoons water (optional)

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the beef cubes in batches. Brown them on all sides. Once browned, remove the beef and set it aside.
  3. In the same pot, add the chopped onion. Cook until it turns translucent, about 5 minutes. Then, add the minced garlic and sauté for another minute.
  4. Next, stir in the sliced mushrooms and carrots. Cook until the mushrooms are tender, which should take about 5-7 minutes.
  5. Return the browned beef to the pot. Now, stir in the diced potatoes, beef broth, red wine (if you’re using it), tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  6. Bring everything to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef is tender.
  7. If you want it to be thicker, mix the cornstarch with water until smooth, then stir it into the stew. Cook for another 5-10 minutes until thickened.
  8. Before serving, take out the bay leaf and adjust the seasoning if needed. Serve warm, and feel free to garnish with fresh herbs. Enjoy it with crusty bread or over mashed potatoes.
