Beef Noodle Soup

Beef Noodle Soup is a warm and hearty dish that’s perfect for cold days or when you’re feeling under the weather. This comforting soup is filled with tender beef, fresh vegetables, and delicious noodles. It’s easy to make and will surely please everyone at the dinner table!

Ingredients:

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup mushrooms, sliced
  • 2 cups egg noodles or your favorite noodles
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Once hot, add the beef stew meat to the pot and brown it on all sides. Then, remove the beef and set it aside.
  3. In the same pot, add the chopped onion and cook for about 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for 1 minute until it smells great.
  5. Return the browned beef to the pot.
  6. Add the beef broth, water, soy sauce, Worcestershire sauce, dried thyme, and bay leaf. Stir everything well.
  7. Bring the mixture to a boil. Then, reduce the heat to low and let it simmer for 1 hour, or until the beef is tender.
  8. Add the sliced carrots, celery, and mushrooms. Continue to simmer for another 10-15 minutes until the vegetables are tender.
  9. Add the noodles and cook according to the package instructions until they are tender.
  10. Season with salt and pepper to taste.
  11. Don’t forget to remove the bay leaf before serving.
  12. Garnish with chopped fresh parsley.

Tips to Make Beef Noodle Soup:

  • Always brown the beef well; this adds more flavor to your soup.
  • You can add more vegetables like peas or corn if you like.
  • For a spicier kick, add some red pepper flakes while the soup simmers.
