  • 3/4 cup all-purpose flour

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Directions

  1. Make the Bang Bang Sauce: In a small bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Stir well and set it aside.
  2. Prepare the Batter: In a medium mixing bowl, whisk together the buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper. Mix until smooth.
  3. Coat the Chicken: Add the chicken tenderloins to the batter. Toss them around until they are well coated.
  4. Prepare the Breadcrumbs: Spread the panko breadcrumbs on a shallow plate. Take each piece of chicken out of the batter, let the excess drip off, and roll it in the panko. Press lightly to make sure it sticks.
  5. Heat the Oil: In a large skillet, heat about an inch of canola oil over medium-high heat until it reaches 365°F.
