Ingredients
- 1 cup mayonnaise
- 1/2 cup Thai sweet chili sauce
- 1 teaspoon Sriracha (or more to taste)
- 2 tablespoons honey
- 1 1/2 pounds boneless skinless chicken tenderloins
- 1 cup buttermilk
- 3/4 cup all-purpose flour
- 1/2 cup cornstarch
- 1 large egg (room temperature)
- 1 tablespoon Sriracha
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper (optional)
- 2 cups panko breadcrumbs (plain)
- Canola oil (for frying)
- Parsley (chopped, for garnish)
Directions
- Make the Bang Bang Sauce: In a small bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Stir well and set it aside.
- Prepare the Batter: In a medium mixing bowl, whisk together the buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper. Mix until smooth.
- Coat the Chicken: Add the chicken tenderloins to the batter. Toss them around until they are well coated.
- Prepare the Breadcrumbs: Spread the panko breadcrumbs on a shallow plate. Take each piece of chicken out of the batter, let the excess drip off, and roll it in the panko. Press lightly to make sure it sticks.
- Heat the Oil: In a large skillet, heat about an inch of canola oil over medium-high heat until it reaches 365°F.
- Fry the Chicken: Add the chicken pieces to the hot oil in batches. Cook for about 2-3 minutes on each side, or until they are golden brown and the internal temperature reaches 165°F.
- Drain the Chicken: Use a slotted spoon to take the fried chicken out and place it on a paper towel-lined plate to drain.
- Serve: Toss the chicken in the Bang Bang Sauce, sprinkle with chopped parsley, and serve while warm.
Tips to Make Bang Bang Chicken
- Don’t crowd the pan: Fry the chicken in batches to keep the oil hot for a crispy finish.
- Adjust the spice: If you like it spicier, add more Sriracha to the sauce.
- Double the sauce: If you love the bang bang flavor, consider making extra sauce for dipping.
Enjoy your homemade Bang Bang Chicken! It’s a dish that will impress everyone at the table.
