Blueberry Lemon Donuts Recipe (Baked)

Ingredients:

For the Donuts:

  • 1 cup all-purpose flour

  • 1/3 cup sugar

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/3 cup milk

  • 1 egg

  • 2 tbsp melted butter

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 1/2 cup fresh or frozen blueberries (tossed in 1 tsp flour)

For the Glaze:

  • 1/2 cup powdered sugar

  • 1–2 tbsp fresh lemon juice

  • Optional: extra lemon zest or a few mashed blueberries for color


Instructions:

  1. Preheat oven to 350°F (175°C). Grease a donut pan.

  2. In a bowl, whisk together dry ingredients: flour, sugar, baking powder, baking soda, salt.

  3. In another bowl, mix wet ingredients: milk, egg, melted butter, vanilla, and lemon zest.

  4. Combine wet and dry, then gently fold in the blueberries.

  5. Spoon or pipe batter into the donut pan, filling each about 3/4 full.

  6. Bake for 12–15 minutes, or until lightly golden and a toothpick comes out clean.

  7. Let cool before dipping in glaze. Add sprinkles or extra zest if you like!
