Strawberry Cheesecake Crumbl Cookies

Strawberry Cheesecake Crumbl Cookies Recipe

Ingredients:

For the Cookies:
  • 1 cup unsalted butter, softened

  • ¾ cup granulated sugar

  • ½ cup brown sugar

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 2 ¾ cups all-purpose flour

  • 2 tsp cornstarch

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

For the Cheesecake Topping:
  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • ½ tsp vanilla extract

For the Strawberry Swirl:
  • ½ cup strawberry preserves or jam

  • (Optional: 1 tbsp water to thin it out)


‍ Instructions:

1. Make the Cookies:

  • Preheat oven to 350°F (175°C).

  • In a large bowl, cream butter and sugars together until light and fluffy.

  • Add eggs and vanilla. Beat until combined.

  • In another bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.

  • Gradually add dry ingredients to wet and mix until a dough forms.

  • Scoop large dough balls (about ¼ cup each), flatten slightly, and place on a baking sheet.

  • Bake 12–14 minutes. Let cool completely.

2. Make the Cheesecake Topping:

  • Beat cream cheese until smooth. Add powdered sugar and vanilla, and mix until creamy.

  • Transfer to a piping bag or spoon it over the cooled cookies.

3. Strawberry Swirl:

  • Warm strawberry preserves slightly and swirl over the cheesecake layer using a toothpick or knife for that signature look.


Tip:

Chill the cookies for 20–30 minutes after frosting to set the cheesecake layer for the best texture!
