8 oz cream cheese, softened
-
½ cup powdered sugar
-
½ tsp vanilla extract
For the Strawberry Swirl:
-
½ cup strawberry preserves or jam
-
(Optional: 1 tbsp water to thin it out)
Instructions:
1. Make the Cookies:
-
Preheat oven to 350°F (175°C).
-
In a large bowl, cream butter and sugars together until light and fluffy.
-
Add eggs and vanilla. Beat until combined.
-
In another bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
-
Gradually add dry ingredients to wet and mix until a dough forms.
-
Scoop large dough balls (about ¼ cup each), flatten slightly, and place on a baking sheet.
-
Bake 12–14 minutes. Let cool completely.
2. Make the Cheesecake Topping:
-
Beat cream cheese until smooth. Add powdered sugar and vanilla, and mix until creamy.
-
Transfer to a piping bag or spoon it over the cooled cookies.
3. Strawberry Swirl:
-
Warm strawberry preserves slightly and swirl over the cheesecake layer using a toothpick or knife for that signature look.
Tip:
Chill the cookies for 20–30 minutes after frosting to set the cheesecake layer for the best texture!
