Apple Salad with Honeycrisp Apples Recipe

Ingredients:

  • 2 large Honeycrisp apples, thinly sliced or chopped

  • 1 cup celery, sliced

  • ½ cup walnuts or pecans, toasted

  • ⅓ cup dried cranberries

  • ¼ cup red onion, thinly sliced (optional)

  • ½ cup crumbled feta or goat cheese

  • 4 cups mixed greens or baby spinach

Dressing:

  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • Salt & pepper to taste
