Air Fryer Chicken and Veggies

This air fryer chicken and veggies recipe is quick, healthy, and packed with flavor! Perfect for a weeknight dinner, it’s high in protein and full of nutrients.

Ingredients

For the Chicken & Veggies:

  • 2 boneless, skinless chicken breasts (cubed)
  • 1 cup broccoli florets
  • 1 cup bell peppers (red, yellow, or green, sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (sliced)
  • 1 tablespoon olive oil

For the Seasoning:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning (or dried oregano)
  • ¼ teaspoon red pepper flakes (optional for heat)

Instructions

1️⃣ Preheat Air Fryer – Set your air fryer to 375°F (190°C) and let it preheat for a few minutes.

2️⃣ Season the Chicken & Veggies – In a large bowl, toss the cubed chicken and veggies with olive oil and seasoning mix until well coated.

3️⃣ Arrange in the Air Fryer – Spread the chicken and veggies evenly in the air fryer basket in a single layer (cook in batches if necessary).

4️⃣ Air Fry – Cook for 12-15 minutes, shaking the basket halfway through, until the chicken reaches an internal temperature of 165°F (75°C) and the veggies are tender-crisp.

5️⃣ Serve & Enjoy – Plate your delicious meal and serve with your favorite dipping sauce or over rice/quinoa for a complete dish.
