Apple Cranberry Coleslaw

A crisp, refreshing coleslaw with the perfect balance of sweetness and tang!

Ingredients:

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large apple, julienned (Honeycrisp, Fuji, or Granny Smith work well)
  • 1/2 cup dried cranberries
  • 1/3 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey (or maple syrup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced almonds or sunflower seeds (optional, for crunch)

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
  2. Assemble the Slaw:
    • In a large mixing bowl, combine the green cabbage, red cabbage, julienned apple, and dried cranberries.
    • Pour the dressing over the slaw and toss until everything is evenly coated.
  3. Chill & Serve:
    • Let the coleslaw sit in the refrigerator for at least 15-30 minutes before serving to allow the flavors to meld.
    • Garnish with sliced almonds or sunflower seeds, if desired.
