BAKED ALFREDO PASTA LAYERED WITH RICOTTA BOLOGNESE AND TOPPED WITH MOZZARELLA 









A deliciously one-dish pasta dinner the whole family will love! SO GOOD!! 

RECIPE – Serves 6
Ingredients 

Pasta and Sauce:
500g/17.6oz Stellini Pasta
540ml Double Cream (Heavy Cream)
100g/3.5oz Butter
6 Cloves Garlic, crushed
250g/8.8oz Ricotta
¾ Cup Parmesan Cheese
¾ Cup Pasta Water
Bolognese:
400g/14oz Ground Beef
400g/14oz Ground Pork
1 Medium Onion, diced
3 Garlic Cloves, minced
2 Cans (400g/14oz) Tomato Juice (Passata)
1 Tbsp Tomato Paste
1 Tsp Dried Oregano
2 Tbsp Fresh Basil, chopped
1 Tsp Sugar
¼ Tsp Chilli Flakes
Salt & Pepper
Topping:
150g/5.3oz Shredded Mozzarella
Parmesan Cheese
Freshly Ground Pepper
Fresh chopped basil for garnish
Method:
Meat Sauce –
Cook the onions in a little olive oil until softened. Add minced garlic and cook for just 1 more minute until fragrant.
Add the ground beef and pork and cook until no longer pink.
Add the tomato paste and tomato juice, stir through then add the dried oregano, chopped basil, chilli flakes, sugar and season with salt and pepper. Simmer uncovered for 30 minutes.
Alfredo Sauce –
Cook the crushed garlic in melted butter just for a few minutes, do not burn.
Add the cream, season with salt and pepper and simmer for 10 minutes, till thickened.
Add the parmesan cheese, stir through until melted then add the reserved pasta water. Cook for 1 more minute and turn of heat.
Pasta & Assemble –
Cook pasta according to package instructions minus 1 minute. Drain and transfer to a large bowl.
Mix pasta with alfredo sauce. Remove half of the pasta and transfer to a deep baking dish.
Top with spoonfuls of ricotta and spread out all over the dish.
Top with half of the meat sauce and repeat with pasta, meat sauce, shredded mozzarella, parmesan cheese and freshly ground pepper.
Bake in preheated oven 190C/375F until bubbling and cheese is melted and golden.
