Cheesecake-Stuffed Chocolate Chip Cookies
Soft and chewy chocolate chip cookies with a luscious cheesecake filling inside — the ultimate indulgent treat!
Ingredients:
For the Cheesecake Filling:

8 oz cream cheese, softened

1/3 cup powdered sugar

1/2 tsp vanilla extract
For the Cookie Dough:

1 cup (2 sticks) unsalted butter, softened

3/4 cup brown sugar
-
1/2 cup granulated sugar

2 large eggs
-
1 tbsp vanilla extract
-
2 3/4 cups all-purpose flour
-
1 tsp baking soda
-
1/2 tsp salt
-
2 cups chocolate chips (semi-sweet or milk)
Instructions:
1. Make the Cheesecake Filling:

In a bowl, beat together cream cheese, powdered sugar, and vanilla until smooth.

Scoop small spoonfuls (about 1 tsp each) onto a parchment-lined tray.

Freeze for at least 30 minutes, until firm.
2. Make the Cookie Dough:

In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

Beat in eggs and vanilla.

In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture.

Fold in chocolate chips. Chill dough for 30 minutes (optional, but helps handling).
3. Assemble the Cookies:

Scoop 2 tbsp of cookie dough, flatten it slightly in your hand.

Place a frozen cheesecake ball in the center.

Cover with another tbsp of dough and seal edges to form a ball.

Place on a lined baking sheet, leaving space between cookies.
4. Bake:

Bake at 350°F (175°C) for 12–14 minutes, until golden on the edges and slightly soft in the middle.

Let cool for at least 10 minutes before eating — the cheesecake center needs to settle!
