Meatloaf gets a fun upgrade—crispy outside, melty cheese inside, baked to party-perfect glory!
Ingredients:

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup milk

1 egg
-
1/2 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning (optional)

4 oz block of cheddar or mozzarella cheese, cut into 1/2-inch cubes

Ketchup or BBQ sauce (for topping, optional)

Cooking spray or olive oil (for greasing)
Instructions:

Preheat the oven to 375°F (190°C). Lightly grease a muffin tin or line it with parchment paper squares.

Prepare the meat mixture: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix until just combined—do not overmix.

Form the bites: Take about 2 tablespoons of the meat mixture and flatten it in your palm. Place a cube of cheese in the center, then wrap the meat around it to form a ball. Repeat until all the mixture is used.

Place in muffin tin: Add each meatball to the prepared muffin tin. If desired, top with a small dollop of ketchup or BBQ sauce.

Bake: Bake for 18–22 minutes, or until cooked through and the tops are slightly crispy.

Cool and serve: Let rest for 5 minutes before removing. Serve warm as an appetizer or with a side of mashed potatoes or salad for a meal.
