Cranberry Feta Pinwheels Recipe

Ingredients:

  • 8 oz cream cheese, softened

  • 1 cup dried cranberries (Craisins), roughly chopped

  • 3/4 cup crumbled feta cheese

  • 1/4 cup chopped green onions (or chives)

  • 4 large flour tortillas (10-inch size works well)

  • Optional: 1/4 teaspoon garlic powder or a dash of black pepper for a savory kick


Instructions:

  1. Mix the filling:

    • In a medium bowl, mix the softened cream cheese until smooth.

    • Fold in chopped cranberries, feta, green onions, and any optional seasoning.

  2. Spread & roll:

    • Lay out a tortilla and evenly spread about 1/4 of the filling across it, all the way to the edges.

    • Roll it up tightly (like a jelly roll), then repeat with the remaining tortillas.

  3. Chill:

    • Wrap the rolls in plastic wrap and refrigerate for at least 1 hour to firm up — this makes slicing easier.

  4. Slice & serve:

    • Remove plastic, trim ends if desired, and slice each roll into 1/2- to 1-inch pinwheels.

    • Arrange on a platter and serve chilled or at room temperature.


Tips & Variations:

  • Add texture: Mix in 1/4 cup chopped pecans or walnuts for a nutty crunch.

  • Sweet-savory boost: Add a drizzle of honey or maple syrup to the filling for a hint of sweetness.

  • Make ahead: These can be made a day in advance — just slice right before serving.
