Cranberry Feta Pinwheels Recipe
Ingredients:
-
8 oz cream cheese, softened
-
1 cup dried cranberries (Craisins), roughly chopped
-
3/4 cup crumbled feta cheese
-
1/4 cup chopped green onions (or chives)
-
4 large flour tortillas (10-inch size works well)
-
Optional: 1/4 teaspoon garlic powder or a dash of black pepper for a savory kick
Instructions:
-
Mix the filling:
-
In a medium bowl, mix the softened cream cheese until smooth.
-
Fold in chopped cranberries, feta, green onions, and any optional seasoning.
-
-
Spread & roll:
-
Lay out a tortilla and evenly spread about 1/4 of the filling across it, all the way to the edges.
-
Roll it up tightly (like a jelly roll), then repeat with the remaining tortillas.
-
-
Chill:
-
Wrap the rolls in plastic wrap and refrigerate for at least 1 hour to firm up — this makes slicing easier.
-
-
Slice & serve:
-
Remove plastic, trim ends if desired, and slice each roll into 1/2- to 1-inch pinwheels.
-
Arrange on a platter and serve chilled or at room temperature.
-
Tips & Variations:
-
Add texture: Mix in 1/4 cup chopped pecans or walnuts for a nutty crunch.
-
Sweet-savory boost: Add a drizzle of honey or maple syrup to the filling for a hint of sweetness.
-
Make ahead: These can be made a day in advance — just slice right before serving.
