Crispy Fried Chicken Gizzards
Tender on the inside, crispy on the outside — this fried gizzard recipe is a Southern favorite made simple.
Ingredients:

1 lb chicken gizzards, cleaned and trimmed

2 cups buttermilk (or 2 cups milk + 1 tbsp lemon juice or vinegar)

1½ cups all-purpose flour

½ cup cornstarch (adds extra crunch)

1 tsp garlic powder

1 tsp onion powder

Salt and black pepper, to taste

Oil, for frying (vegetable or peanut oil recommended)
Instructions:
1. Marinate the Gizzards:
Place cleaned gizzards in a bowl and cover with buttermilk.
Cover and refrigerate for at least 2 hours, or overnight for best tenderness.
2. Prepare the Coating:
In a separate bowl, mix flour, cornstarch, garlic powder, onion powder, salt, and pepper.
3. Heat the Oil:
In a deep skillet or fryer, heat oil to 350°F (175°C).
4. Dredge and Fry:
Remove gizzards from the buttermilk, letting excess drip off.
Dredge in the flour mixture, pressing to coat well.
Fry in batches for 4–6 minutes, or until golden brown and crispy.
Drain on a paper towel–lined plate.
5. Serve Hot:
Enjoy with hot sauce, ranch, or your favorite dipping sauce!
