Garlic Herb Roasted Veggies
Ingredients:

2 cups broccoli florets

1 cup carrots, sliced

1 red bell pepper, chopped

1 zucchini, sliced

3 tbsp olive oil
-
4 garlic cloves, minced

1 tsp dried thyme
-
1 tsp dried rosemary
-
1/2 tsp paprika
-
Salt & pepper to taste

Optional: grated Parmesan for garnish
Instructions:

Preheat oven to 425°F (220°C).

Mix veggies in a large bowl.

In a small bowl, combine olive oil, garlic, thyme, rosemary, paprika, salt & pepper.

Toss the veggies with the garlic herb oil mixture until evenly coated.

Spread on a baking sheet in a single layer.

Roast for 20–25 minutes, stirring halfway through, until golden and tender.

Sprinkle Parmesan if using, and serve warm!
