Garlic Herb Roasted Veggies

Ingredients:

  • 2 cups broccoli florets

  • 1 cup carrots, sliced

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1/2 tsp paprika

  • Salt & pepper to taste

  • Optional: grated Parmesan for garnish


Instructions:

  1. Preheat oven to 425°F (220°C).

  2. Mix veggies in a large bowl.

  3. In a small bowl, combine olive oil, garlic, thyme, rosemary, paprika, salt & pepper.

  4. Toss the veggies with the garlic herb oil mixture until evenly coated.

  5. Spread on a baking sheet in a single layer.

  6. Roast for 20–25 minutes, stirring halfway through, until golden and tender.

  7. Sprinkle Parmesan if using, and serve warm!
