Golden-Brown Keto Cuban Sliders with Melty Cheese and Fresh Tomato Filling

Ingredients:
8 small keto-friendly slider buns
1/2 lb Cuban pork (or pork tenderloin), shredded
4 ounces Swiss cheese, sliced
2 tablespoons Dijon mustard
1/2 cup pickles, sliced
1/2 cup diced tomatoes
2 tablespoons butter, melted
Salt and pepper to taste
Directions:
Preheat the oven to 375°F (190°C).
Slice the keto buns in half, keeping the top and bottom attached.
Lay the bottom halves of the buns on a baking sheet.
Spread a thin layer of Dijon mustard on each bottom bun.
Layer the shredded Cuban pork over the mustard.
Add slices of Swiss cheese and a few pickle slices on top of the pork.
Sprinkle diced tomatoes over the cheese and pickles for a fresh contrast.
Place the top halves of the buns over the fillings.
Brush the tops of the buns with melted butter and season with salt and pepper.
Place the sliders in the oven and bake for 12-15 minutes or until the buns are golden brown and the cheese has melted.
Once done, remove from the oven and cut the sliders in half while keeping them touching to preserve their shape.
