Yes! A Homemade Mexican Pizza is like Taco Bell’s cult classic — but way better, because you can pile on all the good stuff and skip the mystery ingredients. Super easy, cheesy, and perfect for a fun dinner night.

Homemade Mexican Pizza

Ingredients (makes 2 pizzas):

  • 4 flour tortillas (8-inch size)

  • 1 lb ground beef (or turkey/plant-based crumbles)

  • 1 packet taco seasoning + 1/2 cup water

  • 1/2 cup refried beans (warmed for easier spreading)

  • 1/2 cup enchilada sauce or taco sauce

  • 1 cup shredded Mexican blend or cheddar cheese

  • 1/4 cup diced tomatoes

  • 1/4 cup sliced black olives (optional)

  • Green onions, sliced (for topping)

  • Sour cream, guac, or jalapeños (optional toppings)

  • Oil (for crisping tortillas)

Instructions:

  1. Preheat oven to 400°F (200°C)

  2. Brown the Beef:

    • Cook ground beef in a skillet until browned.

    • Drain excess fat.

    • Stir in taco seasoning and water.

    • Simmer until thickened, then set aside.

  3. Crisp the Tortillas:

    • Lightly brush tortillas with oil.

    • Bake or pan-fry until golden and crispy (3–5 mins per side in oven or skillet).

    • They should be stiff enough to hold toppings.

  4. Assemble the Pizza:

    • Take 1 tortilla, spread with refried beans.

    • Top with seasoned beef.

    • Place another tortilla on top to sandwich it.

  5. Top It Off:

    • Spread enchilada or taco sauce on top layer.

    • Sprinkle with cheese, diced tomatoes, and olives.

  6. Bake:

    • Place pizzas on a baking sheet.

    • Bake for 8–10 minutes, until cheese is melted and bubbly.

  7. Garnish & Serve:

    • Add green onions and any extra toppings you love.

    • Slice like a pizza and devour.

Customization Ideas:

  • Spicy: Add jalapeños, hot sauce, or pepper jack cheese.

  • Vegetarian: Use beans, corn, sautéed peppers/onions, or plant-based crumbles.

  • Layered version: Stack more than two tortillas with fillings in between for a Mexican pizza tower!
