Loaded Potato & Meatloaf Casserole
Layers of love: juicy beef, fluffy potatoes, and golden cheesy goodness!
Ingredients
For the Meatloaf Layer:

1 ½ lbs ground beef

1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 egg
-
1/2 cup breadcrumbs
-
1/4 cup milk
-
2 tbsp ketchup
-
1 tbsp Worcestershire sauce
-
Salt & pepper to taste
For the Potato Layer:

4 cups mashed potatoes (prepared ahead)

1/4 cup sour cream
-
2 tbsp butter
-
Salt to taste
Toppings:
-
1 cup shredded cheddar cheese
-
4 strips cooked bacon, crumbled
-
2 green onions, chopped
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13” baking dish.

Make the meatloaf base:
In a bowl, combine all meatloaf ingredients. Mix until well blended. Press evenly into the bottom of the dish. -
Bake the meat layer for 25–30 minutes or until cooked through. Drain excess fat if needed.

Prepare potato layer:
Stir sour cream and butter into mashed potatoes until smooth. Spread evenly over the cooked meat layer. -
Add toppings:
Sprinkle cheddar cheese and crumbled bacon on top. -
Final bake:
Bake uncovered for another 10–15 minutes, until cheese is melted and golden. -
Garnish & Serve:
Sprinkle chopped green onions on top. Let sit for 5 minutes before slicing.
