Loaded Potato Meatloaf – Classic Comfort, Cheesy Potato Perfection!

Loaded Potato Meatloaf

Ingredients:

For the Meatloaf:

  • 1 ½ lbs ground beef (or a mix of beef and pork)

  • 1 cup breadcrumbs (or crushed Ritz crackers)

  • 1 egg

  • 1/2 cup milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt & black pepper to taste

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup cooked and crumbled bacon

  • 2 tablespoons ketchup or BBQ sauce

For the Loaded Potato Topping:

  • 3 cups mashed potatoes (prepared and seasoned)

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese

  • 1/4 cup chopped green onions

  • 1/4 cup cooked bacon bits

  • Optional: extra cheese and bacon for topping


Instructions:

1. Prep and Mix Meatloaf:

  • Preheat oven to 375°F (190°C).

  • In a large bowl, mix together all meatloaf ingredients until fully combined — don’t overmix.

  • Press into a greased loaf pan or form into a loaf shape on a baking sheet lined with parchment.

2. Bake Meatloaf:

  • Bake uncovered for 35–40 minutes, or until internal temp hits 155–160°F.

3. Prepare Loaded Potato Topping:

  • While the meatloaf bakes, mix mashed potatoes with sour cream, cheddar, green onions, and bacon.

  • (You can make mashed potatoes from scratch or use leftovers — just make sure they’re creamy and well-seasoned.)

4. Top and Finish:

  • Once the meatloaf is mostly cooked, carefully spread the potato mixture over the top.

  • Sprinkle with extra cheese and bacon if desired.

  • Return to oven and bake for 10–15 more minutes, until the cheese is melty and golden.

5. Serve:

  • Let rest 5 minutes before slicing.

  • Garnish with extra green onions and serve with a green veggie or simple salad.
