Loaded Potato Meatloaf
Ingredients:
For the Meatloaf:

1 ½ lbs ground beef (or a mix of beef and pork)

1 cup breadcrumbs (or crushed Ritz crackers)

1 egg
-
1/2 cup milk
-
1/2 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
Salt & black pepper to taste
-
1/2 cup shredded cheddar cheese
-
1/4 cup cooked and crumbled bacon
-
2 tablespoons ketchup or BBQ sauce
For the Loaded Potato Topping:

3 cups mashed potatoes (prepared and seasoned)

1/2 cup sour cream
-
1 cup shredded cheddar cheese
-
1/4 cup chopped green onions
-
1/4 cup cooked bacon bits
-
Optional: extra cheese and bacon for topping
Instructions:
1. Prep and Mix Meatloaf:

Preheat oven to 375°F (190°C).

In a large bowl, mix together all meatloaf ingredients until fully combined — don’t overmix.

Press into a greased loaf pan or form into a loaf shape on a baking sheet lined with parchment.
2. Bake Meatloaf:

Bake uncovered for 35–40 minutes, or until internal temp hits 155–160°F.
3. Prepare Loaded Potato Topping:

While the meatloaf bakes, mix mashed potatoes with sour cream, cheddar, green onions, and bacon.

(You can make mashed potatoes from scratch or use leftovers — just make sure they’re creamy and well-seasoned.)
4. Top and Finish:

Once the meatloaf is mostly cooked, carefully spread the potato mixture over the top.

Sprinkle with extra cheese and bacon if desired.

Return to oven and bake for 10–15 more minutes, until the cheese is melty and golden.
5. Serve:

Let rest 5 minutes before slicing.

Garnish with extra green onions and serve with a green veggie or simple salad.
