Mom’s Best Cake
Ingredients:
For the cake:

2 cups all-purpose flour

2 cups granulated sugar

1/2 tsp salt

1 tsp baking soda

1/2 cup (1 stick) unsalted butter

1/2 cup vegetable oil

1 cup water

2 large eggs

1/2 cup buttermilk (or milk + 1 tsp vinegar)

1 tsp vanilla extract
Optional add-ins (customizable!):

1/2 cup chopped walnuts or pecans

1/2 cup shredded coconut

1/2 cup crushed pineapple (drained)
For the frosting (Mom’s favorite):

1/2 cup butter
-
1/4 cup milk
-
3 tbsp cocoa powder (for chocolate version)

2 cups powdered sugar

1 tsp vanilla extract
Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.

Mix dry ingredients: In a large bowl, whisk flour, sugar, salt, and baking soda.

Prepare wet mixture: In a saucepan, bring butter, oil, and water to a boil. Pour over the dry ingredients and stir to combine.

Add eggs, buttermilk, and vanilla. Stir until the batter is smooth. Fold in any optional add-ins.

Bake for 30–35 minutes or until a toothpick comes out clean. Let cool slightly.

Make the frosting: In a saucepan, melt butter with milk and cocoa (if using). Remove from heat and stir in powdered sugar and vanilla until smooth.

Frost while warm for that classic glossy finish. Let it set, then slice and enjoy!
