Peanut Butter Cup Cookies Recipe

Ingredients:

  • 1½ cups creamy peanut butter

  • ½ cup unsalted butter, softened

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1½ tsp vanilla extract

  • 2¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 24 mini peanut butter cups (unwrapped)


‍ Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Cream together peanut butter, butter, and sugars until fluffy.

  3. Add eggs and vanilla. Mix well.

  4. In a separate bowl, whisk flour, baking soda, and salt. Slowly combine with wet ingredients.

  5. Roll dough into 1-inch balls and place into mini muffin tin.

  6. Bake for 8–10 mins, then immediately press a mini peanut butter cup into the center of each.

  7. Let cool completely before removing.
