Ingredients:
2 chicken breasts, boneless and skinless
1 cup sliced mushrooms (button or cremini)
2 tbsp olive oil
1 tbsp black pepper
1 garlic clove, minced
1/4 cup chicken broth
1 tbsp soy sauce
Salt to taste
Directions:
Heat olive oil in a large skillet over medium heat.
Season the chicken breasts with black pepper and salt.
Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sliced mushrooms. Cook for 3-4 minutes until the mushrooms are soft.
Pour in the chicken broth and soy sauce, stirring to combine. Let the sauce simmer for 2-3 minutes.
Return the chicken to the skillet and coat it with the sauce. Let it cook for another 2 minutes.
Serve hot, garnished with extra black pepper if desired.
