Sweet Savory Mongolian Chicken
Ingredients:
1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons vegetable oil
4 cloves garlic, minced
1 tablespoon ginger, minced
1/2 cup soy sauce (low sodium preferred)
1/2 cup brown sugar
1/4 cup water
1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
1/4 teaspoon crushed red pepper flakes (optional, for heat)
3 green onions, sliced
Sesame seeds for garnish
Directions:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add garlic and ginger and sauté for about 1 minute until fragrant.
Stir in the soy sauce, brown sugar, water, and red pepper flakes (if using). Bring the sauce to a simmer.
Slowly whisk in the cornstarch slurry to thicken the sauce. Stir constantly until the sauce thickens, about 2 minutes.
Return the chicken to the skillet and toss well to coat it evenly with the sauce. Cook for an additional 2 minutes so the chicken absorbs the flavors.
Remove from heat, sprinkle with sliced green onions and sesame seeds before serving.
