Ingredients

  • 2 large eggs

  • 1/2 cup milk
  • 1 small onion, finely chopped

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

For the Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tsp mustard (yellow or Dijon)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.

  2. Mix the meatloaf ingredients: In a large bowl, combine ground beef, crushed crackers, eggs, cheddar cheese, milk, onion, bell pepper (if using), salt, pepper, and garlic powder. Mix gently until just combined — avoid overmixing to keep the meatloaf tender.

  3. Shape the loaf: Transfer the mixture to the prepared loaf pan and shape it evenly.

  4. Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread half of the glaze over the meatloaf.

  5. Bake: Bake for 45 minutes. Remove from the oven, spread the remaining glaze on top, and bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).

  6. Rest and serve: Let the meatloaf rest for 5-10 minutes before slicing.
